Sustainability
Our home waters around the Fal estuary are renowned for being the last oyster fishery in Europe to fish solely under sail and oar during the winter months. Sustainability is key as the small working boats float down on the tide pulling up local native oysters that have been hand dredged, throwing back what is too small to continue their life, and then landing only the mature oysters. We transfer this approach to the sourcing of all our other shellfish, and we are keenly aware through a life time of experience that we need to prioritise this and play our role in the continuation of the fantastic shellfish that our English coastline produces.
